Img_03581_1Well, I got a few responses with my last request for dinner ideas – and although they were few, they were DELICIOUS!  A Creamy Chicken Pasta that was so good I couldn't stop eating it (see photo), and a simple and yummy BBQ Pork Sandwich recipe that you can put in the crock pot and forget it until dinner time.

So, after trying and loving these great ideas, I thought I would try again to see if I could get some more dinner favorites to add to my list.   And since I am requesting more from you, I thought I would also add a very quick and easy dinner (or breakfast) I love to make.

German Pancakes (or as Lily loves to call them, "Square Pancakes")

  • 3 eggs
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla
  • 1/2 cup flour
  • 2 Tablespoons butter

Preheat oven to 425 degrees.  Beat the eggs, then mix in milk, vanilla, salt, and flour.  In an 8×8 baking dish (or 9×13 if you double it), spray the pan and place butter in baking dish.  Put it in the oven until the butter is melted, then remove and pour in batter.  Immediately return to the oven and bake for 15 minutes, or until edges are big and crispy.  Serve with fruit and whipped cream (how I like it) or sprinkled with powdered sugar (how Kevin and Lily like it).

*This makes enough for 3-4 people when doubled, but only 2 with the original recipe.

Oh, I haven't had a chance to try it yet, but here was a recipe a friend emailed to me the last time I did this.  It sounds yummy too!

Gensel's Killer Casserole
1 box Mac and Cheese
1 lb. ground meat
1 can cream of mushroom soup
small amout of chopped onion
Brown the meat and onion, drain grease  Prepare Mac and Cheese as directed.  Add the meat and onions to mac and cheese and stir in soup.  Spread in a pyrex sprinkle with yellow cheese. and back until bubbling… about 45 minutes I would say.

    Hi Lisa,
One of my favorite things to make because it is sooo easy are chicken enchiladas. I boil some 2 chicken breasts and then chop them up. In a bowl I combine a block of cream cheese, softened, a can of cream of chicken soup a little bit of milk (maybe 1/4 cup??)some taco or enchilada seasoning and then the chopped up chicken. Take about 6 tortilla shells and divide the mixture between them. Roll up like a burrito and place in a baking dish. Sprinkle with shredded cheese and bake at 300 degrees for about 1/2 an hour or until warm. top with olives and sour cream.
So, that is the version that my kids will eat. I think they are pretty bland and like to add salsa to the mixture and add enchilada sauce and tomatoes to the top.
Derek is super cute. I have a baby that will be four months old May 22nd. She’s not quite as big though….she weighed in at a whopping 8lbs13oz at her 2 month…

german pankcakes — our boys call them “square pancakes”. I’m going to have to try the Killer Casserole — we eat plenty of Mac & Cheese in this house, it would be fun to mix it up a bit. I’m cooking something kinda new tonight – tasted it, but never made it myself. If it goes well I’ll post here.

okay, I meant the boys call german pancakes “rectangle pancakes” — just had lily’s answer on my brain.

Holy cow, Scott is going to be excited. I used to make that exact same creamy chicken pasta recipe all the time (also got it off the back of a bag of noodles). But I lost it when I transferred my recipes to a new system and Scott has been so sad because he loved it. Looks like I’ll be making his day!

well last night’s dinner was a success — Payton even ate some and he NEVER eats anything at dinner. Scott liked it too, but said it was a little “foo foo” for him — anything other than meat & potatoes or fried chicken probably fits into that category for him. This is a Pampered Chef recipe and it’s cooked on a round stone (not sure if you have one). It’s so pretty — when you put this one on the dinner table your family is going to oooo and aaahh
    Lemon Herb Chicken Ring
    Preheat oven to 375.
To a bowl add & mix together:
2 cups coarsly chopped cooked chicken
1/2 cup diced red bell pepper
    2 Tbsp chopped fresh parsley
    1 tsp lemon zest
    2 garlic cloves, pressed
    1 cup shredded mozzarella cheese
    1/2 cup mayonnaise
1 tsp Italian Seasoning (the pampered chef one is the best)
Measure out 1/2 cup grated fresh parmesan cheese. Reserve 2 Tbsp of the cheese. Add remaining cheese to the chicken mixture. Mix well
Unroll 2 packages (8 ounces each) refrigerated crescent rolls, separate into 16 triangles. Arrange triangles, slightly overlapping, in a circle on your large stone with wide ends 4 inches from the edge of baking stone. (Points will extend off the edge of the baking stone.) Use a baking roller to roll wide ends of dough toward center to create a 5-inch opening.
Spoon chicken mixture evenly over dough in a continuous circle. Bring points of triangles up over filling and tuck under dough at center to form a ring. (Filling will show.) Springle remaining parmesan cheese over ring.
Bake 28-30 minutes or until golden brown. If you want to be fancy, garnish with lemon slices and parsley.
Sounds like a lot of work. But if you prep your chicken & bell pepper earlier in the day you can just put it in the fridge until you’re ready to put everything together.

Hey Lisa! I was looking through your blog today, which I love! And I thought I would add our version of German Pancakes, although we call them Dutch Babies. You put apples, cinnamon and brown sugar on the bottom and they turn out soooo good. It’s Rob’s favorite breakfast. Here you go:
    Apple Dutch Babies
    1/4 to 1/3 cup butter (I use 1/4)
    1 1/2 to 2 apples, thinly sliced
    1/4 cup brown sugar, packed
    1/2 tsp cinnamon
    4 large eggs
    1 cup flour
    1 cup milk
    1/4 tsp salt
    1. Heat oven to 400. Melt butter in 9 x 13 pan, in oven. Swish some butter on sides.
    2. Sprinkle brown sugar and cinnamon over melted butter. Arrange sliced apples over sugar.
    3. Beat eggs slightly in medium bowl with wire whisk or hand beater. Beat in flour, milk and salt just until mixed (do not overbeat or pancake may not puff). Pour into pan.
    4. Bake 30 to 35 minutes or until puffy and deep golden brown. Immediately loosen edge of pancake and turn upside down onto heatproof serving plate. Enjoy!
